Cheesy Vegetable Lasagna

Ingredients

9 lasagna noodles


2 tablespoons olive oil


1 medium onion, finely chopped


2 cloves garlic, minced


1 zucchini, chopped


1 bell pepper, chopped


1 cup mushrooms, sliced


2 cups tomato sauce


1 teaspoon dried oregano


1 teaspoon dried basil


Salt and pepper, to taste


1 cup Almarai Mozzarella Cheese, shredded


1/2 cup grated Parmesan cheese


1 cup ricotta cheese


1 egg


1 cup Almarai Whipping Cream

Instructions
  1. In a large skillet, heat the olive oil over medium heat. Add the onion and sauté for about 3-4 minutes until softened.
     
  2. Add the garlic, zucchini, bell pepper, and mushrooms. Cook for another 5-7 minutes until the vegetables are tender.
     
  3. Season with oregano, basil, salt, and pepper. Add the tomato sauce and let the mixture simmer for about 10 minutes.
     
  4. In a separate bowl, combine the ricotta cheese, egg, and half of the shredded Almarai Mozzarella Cheese. Season with a pinch of salt and pepper, then mix until smooth and well combined.
     
  5. Spread a thin layer of the vegetable-tomato sauce mixture in the bottom of a baking dish.
     
  6. Layer 3 lasagna noodles over the sauce, followed by a layer of the ricotta mixture, then a layer of the vegetable mixture.
     
  7. Repeat this process for two more layers. Finish with a final layer of noodles and top with the remaining tomato sauce.
     
  8. Sprinkle the remaining Almarai Mozzarella Cheese and Parmesan cheese on top.
     
  9. Bake at 180°C for 35 minutes.
     
  10. Garnish with fresh basil before serving.
