Chicken curry with rice

A flavorful and aromatic dish, perfect for a delicious and satisfying dinner

Ingredients

400g Alyoum fresh chicken breast, cubes


2 tbsp vegetable oil


1 large onion, finely chopped


2 cloves garlic, minced


1 inch piece of ginger, grated


2 tomatoes, pureed or finely chopped


1 cup coconut milk or yogurt (for creaminess)


1 cup water or chicken broth


1 ½ tsp curry powder


1 tsp turmeric powder


1 tsp cumin powder


1 tsp coriander powder


½ tsp black pepper


1 tsp salt

Instructions
  1. Heat the oil in a deep pan over medium heat.
     
  2. Add the chopped onions and sauté until golden brown.
     
  3. Stir in the garlic and ginger, cooking for another minute.
     
  4. Add the Alyoum chicken breast cubes and cook until lightly browned.
     
  5. Sprinkle in curry powder, turmeric, cumin, coriander, red chili powder, black pepper, and salt. Stir well.
     
  6. Add the pureed tomatoes and cook until the oil starts separating (about 5 minutes).
     
  7. Pour in the water or chicken broth, cover, and let it simmer for 15–20 minutes until the chicken is tender.
     
  8. Stir in the coconut milk and let it cook for another 5 minutes.
     
  9. Garnish with fresh coriander leaves.
     
  10. Serve hot with basmati rice.
