Chicken Milanese Escalope

A delicious and crispy dish that combines authentic Italian flavors, served with a fresh salad and a hint of lemon

Ingredients

2 Alyoum Chicken Breasts, butterflied and pounded thin


1 teaspoon salt


½ teaspoon black pepper


½ teaspoon garlic powder


½ cup all-purpose flour


2 eggs, beaten


1 cup breadcrumbs


½ cup grated Parmesan cheese


½ teaspoon dried oregano


½ cup vegetable oil (for frying)


For Serving:


Lemon wedges


Side salad (arugula, cherry tomatoes, and balsamic dressing)

Instructions
  1. Butterfly the chicken breasts by slicing them horizontally, then pound them to about ¼-inch thickness using a meat mallet.
     
  2. Season both sides of the chicken with salt, black pepper, and garlic powder.
     
  3. Set up a breading station:

       a. Bowl 1: Flour

       b. Bowl 2: Beaten eggs

       c. Bowl 3: Breadcrumbs mixed with Parmesan cheese and oregano
     
  4. Dredge each chicken breast in flour, then dip in the beaten eggs, and finally coat with the breadcrumb mixture, pressing firmly to ensure the breadcrumbs adhere well.
     
  5. Heat vegetable oil in a large pan over medium heat.
     
  6. Fry each chicken piece for 3-4 minutes per side, until golden brown and crispy.
     
  7. Transfer to a paper towel-lined plate to drain excess oil.
     
  8. Serve hot with lemon wedges and a fresh arugula salad. Optionally, drizzle with balsamic glaze or top with shaved Parmesan.
