Date and Nut Energy Bars

This recipe is great for a quick bite anytime you need a boost.

Ingredients

1 cup Almira pressed dates


½  cup almonds


½  cup walnuts


¼  cup shredded coconut


2 tablespoons honey


½  teaspoon vanilla extract


A pinch of salt

Instructions
  1. In a food processor, combine the almonds and walnuts. Pulse until coarsely chopped.
     
  2. Add the Almira pressed dates, shredded coconut, honey, vanilla extract, and salt to the processor. Blend until the mixture becomes sticky and holds together.
     
  3. Line a square baking dish with parchment paper. Press the mixture firmly into the dish, creating an even layer.
     
  4. Refrigerate for at least 2 hours until firm.
     
  5. Once set, remove from the dish and cut into bars. Store in an airtight container in the refrigerator.
