Date and Walnut Bread

A delicious and nutritious dessert that combines the rich flavor of dates with the texture of walnuts

Ingredients

1 cup Almira Khalas dates, pitted and chopped


1 cup boiling water


1 teaspoon baking soda


½  cup unsalted butter, softened


¾  cup brown sugar


2 large eggs


1 teaspoon vanilla extract


1 ¾  cups all-purpose flour


1 teaspoon baking powder


½  teaspoon salt


1 cup walnuts, chopped

Instructions
  1. Preheat the oven to 175°C. Grease a loaf pan and set it aside.
     
  2. In a bowl, combine the chopped Almira Khalas dates, boiling water, and baking soda. Let the mixture sit for 15 minutes.
     
  3. In a separate bowl, cream together the butter and brown sugar until light and fluffy.
     
  4. Add the eggs gradually, beating well after each addition. Stir in the vanilla extract.
     
  5. In another bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the butter mixture, mixing until just combined.
     
  6. Fold in the date mixture and chopped walnuts.
     
  7. Pour the batter into the prepared loaf pan and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
     
  8. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
