Date stuffed ghraybeh cookies

Ingredients

1 cup Almarai unsalted natural butter


¾ cup powdered sugar


2 cups all-purpose flour


½ tsp baking powder


¼ tsp salt


1 tsp vanilla extract


½ cup Almira Pressed Date paste


Whole pistachios

Instructions
  1. In a large mixing bowl, cream together the Almarai natural butter and powdered sugar until light and fluffy, about 3-4 minutes.
     
  2. Gradually add the flour, baking powder, and salt, mixing until a soft dough forms.
     
  3. Stir in the vanilla extract for added flavor. The dough should be smooth and soft.
     
  4. Take a small amount of dough and roll it into a ball, then flatten it slightly in your hand. Place a small amount of the date paste in the center.
     
  5. Fold the edges of the dough over the date paste and seal the cookie into a round or crescent shape, as preferred.
     
  6. Press a whole pistachio into the center of each cookie for garnish.
     
  7. Bake the cookies for 12-15 minutes or until lightly golden.
     
  8. Let the cookies cool completely on the baking sheet before transferring them to a wire rack. Then, serve and enjoy!
