Flourless pistachio cake

This recipe combines the rich flavor of pistachios with the creamy butter, making it the perfect choice for special occasions or a delicious treat at any time

Ingredients

1 ½ cups ground pistachios

1 cup Almarai unsalted Butter, softened


1 cup powdered sugar


4 large eggs


1 tsp vanilla extract


1 tbsp lemon zest


½ tsp salt


1 tbsp cornstarch


Whole pistachios and pistachio paste for garnish

Instructions
  1. Preheat your oven to 180°C. Grease and line a 9-inch round cake pan with parchment paper.
     
  2. In a large mixing bowl, beat the Almarai Butter and powdered sugar together until light and fluffy.
     
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and lemon zest, if using.
     
  4. Fold in the ground pistachios, salt, and cornstarch.
     
  5. Pour the batter into the prepared cake pan and smooth the top.
     
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
     
  7. Allow the cake to cool completely in the pan, then remove it and place it onto a serving plate.
     
  8. Decorate with pistachio paste and crushed pistachios before serving.
