Lemon and Blueberry muffins

This recipe offers a delicious blend of refreshing lemon flavor and sweet blueberries in a light and moist muffin.

Ingredients

½ cup Almarai Unsalted Butter, melted


¾ cup sugar


2 eggs


½ cup milk


1 tsp vanilla extract


Zest of 1 lemon


2 tbsp lemon juice


2 cups all-purpose flour


2 tsp baking powder


½ tsp baking soda


¼ tsp salt


2 cups fresh blueberries

Instructions
  1. In a bowl, whisk together melted Almarai Butter and sugar until combined.
     
  2. Add eggs, Milk, vanilla, lemon zest, and lemon juice. Mix well.
     
  3. Gradually add dry ingredients to the wet mixture, stirring gently. Do not overmix.
     
  4. Fold in the blueberries.
     
  5. Divide the batter evenly into the muffin tin, filling each cup about ¾ full.
     
  6. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
