Quesadilla tortilla

Perfect recipe for a quick and tasty meal, combining melted cheese and fresh vegetables to give you an irresistible flavor

Ingredients

1 bag L'usine plain tortilla


1½ cups grated cheddar cheese


1½ cups grated mozzarella cheese


¾ cup cooked black beans, drained and rinsed


½ cup diced red bell pepper


½ cup sliced green onions


½ cup corn kernels


2 jalapeño peppers, thinly sliced


For Serving:


Homemade salsa or salsa verde


Pico de gallo


Guacamole


Sour cream


Chopped fresh cilantro

Instructions
  1. Lay the tortilla on a large cast iron skillet.
     
  2. In a medium bowl, combine the cheddar and mozzarella cheeses, then toss to mix.
     
  3. Sprinkle half of the cheese evenly over one half of each tortilla, leaving the other half bare. Evenly distribute the black beans, red peppers, green onions, corn, and jalapeños over the cheese. Top with the remaining cheese, then fold the bare half of each tortilla over the fillings to form a half-moon shape.
     
  4. Heat a dry cast iron skillet over medium-low heat. Once hot, add two quesadillas at a time and cook until the cheese is melted, and the tortillas are browned on both sides (about 1 to 2 minutes per side). If the tortillas are browning too quickly before the cheese melts, reduce the heat.
     
  5. Repeat with the remaining quesadillas.
