Savory Halloumi and Spinach Muffins

Ingredients

1 ½ cups all-purpose flour


1 teaspoon baking powder


½ teaspoon baking soda


½ teaspoon salt


½ teaspoon black pepper


½ teaspoon dried oregano


2 eggs


½ cup Greek Yogurt


½ cup Milk


¼ cup olive oil


1 cup Almarai Halloumi Cheese


1 cup fresh spinach, chopped


¼ cup green onions, finely chopped


Sesame seeds (for topping)

Instructions
  1. Preheat the oven to 180°C and grease a 12-cup muffin tin.
     
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, and oregano.
     
  3. In another bowl, whisk the eggs, Greek yogurt, milk, and olive oil until smooth.
     
  4. Gradually mix the wet ingredients into the dry ingredients until just combined.
     
  5. Gently fold in the crumbled Almarai Halloumi cheese, chopped spinach, and green onions.
     
  6. Spoon the batter into the muffin cups, filling each ¾ full.
     
  7. Sprinkle with sesame seeds.
     
  8. Bake for 18-22 minutes, or until golden brown.
